FUNemployment Care Kit

Today in the mail I received this:

These presents were accompanied by the following note:

FUNemployment Care Kit!

*wild applause followed by announcer-type voice*

We all know how arduous the job seeking process can be. From pounding the pavement to revising those resumes, contemplating cover letters to rounding up references, sometimes you just want to throw your hands up in defeat!

*insert footage of frazzled woman, hands in hair, near a flaming printer*

Take a moment for yourself with the product that puts the FUN back in (f)unemployment!

Get the FUNemployment Care Kit today!

I love it. And I love her. Thank you, Jess.

Beach Ride

Back in the olden days I bought a bike.
Back in the olden days I used to ride a bike.

Everywhere.

Recently, my Free Spirit has been sitting forgotten alongside my husband’s mission Liahona. I am happy to announce, that as of this week, the Free Spirit rides again!

Coming out of retirement (both the bike and my leg muscles).

The start.

The finish.

No pictures in between because it is hard to use a camera on a bike.

Happy biking beach people.

Ode to Zucchini

Two reasons I am thankful for zucchini:

1) It grows so well that even a beginning gardener like me feels like a real pro.

2) I can make these muffins to my heart’s content.

Whole Wheat Sugar-free not for the Faint of Heart Zucchini Muffins

1 ½ C rolled oats
1 ½ C whole wheat flour
2 t baking soda
2 t cream of tartar
1 ½ t cinnamon
¼ t nutmeg

Mix together ingredients. In separate bowl combine:

1 ½ C grated zucchini (I wrap my zucchini in a paper towel and squeeze out the excess water after I grate it)
1 t vanilla
½ C honey
¼ C pineapple juice
1 C crushed pineapple
¾ C applesauce
2 egg whites (I once ran out of eggs while making these so I just added a little extra applesauce instead. It came out just fine and would have made my vegan cousin proud)

Combine wet and dry ingredients. Spoon by ¼ cupful into muffin pan.

Bake at 325⁰ for 20 minutes or until inserted knife comes out clean.

Family Trivia

While I was going through my DVR recordings this morning, trying to make room for more of our favorite trash TV, I got caught up in watching several episodes of American Gladiators. A strange choice, I know. However, not so strange when you watch this:

I am a lucky enough girl to call this dirty competitor my father-in-law.
