Lake Silverwood
Moxie absolutely loves the water. Coincidentally, so do we. It seemed only time that we should take The Mox out on the boat to test her sea legs. Well, her lake legs.

Big Bear Lake
Back when I had a job, Nathan was always taking off to do fun things without me while I was at work. I would smile sweetly as he recounted his adventures, seeming positive and encouraging. I would say things like, "I am SO glad you got to go." "Well, at least one of us has to have some fun around here." "I'm just happy knowing you're happy."
One big load of hooey.
Really, I was secretly planning the day when sweet justice would be mine. The day when I would go and frolic about with not a care on my mind besides what snacks I should bring, while he was the one who was stuck toiling away at work.
Recently, my dreams were fulfilled as I got to spend a day on Big Bear Lake with some friends. The company was fantastic, the weather perfect, and the food delicious.
The only thing that could have made it any better was Nate.

It's Genetic
Anyone who knows me is well aware of my affection for food. I like food and I like lots of it. On a recent visit with my grandmother, I realized that this will probably never change.

Beach Ride
Back in the olden days I bought a bike.

Recently, my Free Spirit has been sitting forgotten alongside my husband’s mission Liahona. I am happy to announce, that as of this week, the Free Spirit rides again!

Ode to Zucchini
Two reasons I am thankful for zucchini:
1) It grows so well that even a beginning gardener like me feels like a real pro.
2) I can make these muffins to my heart’s content.
Whole Wheat Sugar-free not for the Faint of Heart Zucchini Muffins

1 ½ C rolled oats
1 ½ C whole wheat flour
2 t baking soda
2 t cream of tartar
1 ½ t cinnamon
¼ t nutmeg
Mix together ingredients. In separate bowl combine:
1 ½ C grated zucchini (I wrap my zucchini in a paper towel and squeeze out the excess water after I grate it)
1 t vanilla
½ C honey
¼ C pineapple juice
1 C crushed pineapple
¾ C applesauce
2 egg whites (I once ran out of eggs while making these so I just added a little extra applesauce instead. It came out just fine and would have made my vegan cousin proud)
Combine wet and dry ingredients. Spoon by ¼ cupful into muffin pan.
Bake at 325⁰ for 20 minutes or until inserted knife comes out clean.

Family Trivia
While I was going through my DVR recordings this morning, trying to make room for more of our favorite trash TV, I got caught up in watching several episodes of American Gladiators. A strange choice, I know. However, not so strange when you watch this:
